Coco Cabana to Open in Dublin’s Waterford Plaza

For over a year, Dublin residents have watched and waited to see which restaurant will move into the space vacated by Stacey’s at Waterford on Tassajara Road. The long wait has finally ended with the recent announcement that a new restaurant called Coco Cabana is on its way. Based on initial reports, Coco Cabana will be a Latin-themed restaurant that promises to complement the current restaurants and businesses in the Shops at Waterford.
The people behind the popular Oasis Grille & Wine Lounge in Downtown Pleasanton will be the ones to operate the Latin-themed restaurant Coco Cabana. Coco Cabana will occupy the entire 4,500 square foot pad that anchors the Shops at Waterford. Details about what Coco Cabana will offer patrons remain scarce at this time; however, the experience at Coco Cabana is expected to be magnificent, given that the Oasis Grille & Wine Lounge has been so successful in its current location in Downtown Pleasanton. Oasis Grille & Wine Lounge has received an average rating of 4 stars on Yelp based on feedback from over 160 reviews.

The location at Waterford is ideal for a new restaurant like Coco Cabana for many reasons. Unlike new commercial developments like Grafton Station, Tralee Village, and Avalon Dublin Station, new restaurants going into the Shops at Waterford no longer have to pay the onerous water and sewer hookup fees, because the previous tenants have already paid them. The water and sewer hookup fees for restaurants in new commercial developments can run anywhere from $200K to $400K. In addition, the Shops at Waterford has remained a thriving hub for shoppers and diners in East Dublin even during the economic downturn. Finally, Coco Cabana will be able to benefit from all of the tenant improvements made by Stacey’s at Waterford.
The owners of Coco Cabana have already signed the lease contract with the Shops at Waterford, but they still need to work with the City of Dublin to hammer out the details for their tenant improvements before renovation may begin. The grand opening date of Coco Cabana has yet to be announced, but a press release is expected soon from Coco Cabana.

As someone that works in downtown Pleasanton and eats there every day, I can tell you that Oasis has the best food (other than Hap’s).. I’m very excited about this. I’m hoping and am confident that they will make this an upscale endeavor–
If you value good quality restaurants (not chains), we need to really support this restaurant (if it’s good, which it should be) to show other businesses that this area is starving (see what I did there) for good restaurants to come in-

I’ve been to Oasis only once, and the food was really good. But it was a Saturday lunch, and the place was nearly empty. I was part of a large party but only three other tables were occupied—and all were couples. Is business really okay? Maybe I just went on an unusually slow day. Anyway, I look forward to Coco Cabana. I hope it is a success.

I love it. We need more great opitons like this with different dining choices. I can’t wait to take the family. Dublin has been feeling a little too San Jose in terms of choice; this will help make us a little more San Francisco.
